The soup is made by traditional Japanese way to cook which only uses fresh pork bone and water. The richness of the soup comes from the marrow of the bone and the soft bone. It contains a lot of collagen, which is essential to maintain smooth skin.
They are boiling over 200kg of fresh pork bone for 14 hours 7days a week.

3. Gogyo
GOGYO was orignally founded by Shigemi Kawahara, the internationally renowned “Ramen King” of IPPUDO fame, in 2003. With stores in Kyoto, Tokyo, Nagoya, Fukuoka, and Hong Kong, Surry Hills marks the 6th location for the brand. GOGYO Surry Hills is a casual-chic Japanese ramen bar and dining space that offers guests the opportunity to “start with drinks, taste a few ‘tsumami,’ and end with ramen.”

GOGYO offers Kogashi-style ramen which involves a charring technique to bring out extremely fragrant and bittersweet results that can only be tasted in our establishments. Classic ramen as well as a vegetarian option are also available to cater to different preferences.

Designer Paul Kelly has created a contemporary ‘wa’ enclave for GOGYO that comfortably accommodates 80 people within bustling Surry Hills. Details have been painstakingly considered for the interior: everything from the colourful retro ramen bowls, to the elegant glassware, to traditional Japanese baskets to place belongings in. Guests can choose from ambient table top dining or watch the theatre of the making of Kogashi-style ramen from counter stools.
